White Bean Chili

White Bean Chili
serves 6 to 8

Start with any kind of white bean
If using bagged, soak, rinse and cook. If using canned, drain and heat.

Pan fry thin chicken breasts and shred.

Boil diced potatoes and drain.

Comine beans, shredded chicken, potatoes, and chili verde salsa
Simmer and serve with sour cream.

Recipe:
1 bag or 2 cans any kind of white bean
3 thin chicken breasts, shredded
2 medium potatoes, diced
1 jar chili verde salsa
sour cream

Cook the bagged beans according to their direction.
If using canned beans, drain and rinse and heat in a small amount of water.

Pan fry chicken and shred.

Boil diced potatoes and drain.

Comine all ingredients to the pan with beans, add chili verde salsa and simmer for about twenty minutes or until thick.

Serve with sour cream.
