Cheesy Potato Soup with Broccoli
serves 8 to 10
Begin with diced potatoes, chopped onion and chopped broccoli
Add enough water to cover and boil for 15 minutes
In another pan, melt butter
Add some flour and half and half (or milk), heat to thicken
Add the butter mixture to the vegetables and cheese, stir.
2 and 1/2 cups potatoes, diced
1 cup onion, chopped
1 cup broccoli, chopped
1 and 1/2 teaspoons salt
16oz Velveeta cheese (or other processed)
1 to 1 and 1/2 sticks of butter, melted
3/4 cups flour
1 pint half and half (or milk)
Add all vegetables and salt to a large saucepan or pot, cover with water and boil for 15 minutes.
Add Velveeta cheese to vegetables, boil an additional 5 minutes.
In another pan, melt butter, then stir in flour and half and half (or milk). Stir frequently until thick.
Add the butter mixture to the soup and stir.
You may add more salt to taste, serve warm.
